Cauliflower & Pasta



This is the biggest Cauliflower I have ever seen!! There is enough in this head for 4 different meals. I cut of a quarter of the head and made this pasta last night. It was really good and had a very earthy taste. This recipe is great for any color cauliflower and also the same recipe using Broccoli.




Ingredients:

1 Regular head of Cauliflower

5 Cloves Garlic, minced

Red Pepper Flakes

Salt & Pepper

Olive Oil

Box of Pasta of your choice



Recipe:


In a pot of salted water, boil Cauliflower for 10 minutes and drain, reserving 3/4 cup of the cauliflower water.



In a skillet, add 4 Tbsp of olive oil and sauté the garlic for 2 minutes.



Add the drained cauliflower to the pot.



Let it cook on medium for about 10 minutes. Slowly add the Cauliflower water reserved from the pot and continue to cook for 10 minutes. Add in the seasonings. Boil the pasta and drain. Put pasta in a large bowl and empty the skillet on top. Add fresh grated cheese to the serving dishes.
