I went to Aldi's and they had chicken tenders on sale. I got 12 pieces for $5.61 which is a much better price than the chicken breasts were. So I put several at a time in a freezer bag and pounded them flat.
INGREDIENTS:
1 1/2 Pounds Chicken Strips
1 1/2 Cups Bread Crumbs
2 Eggs
2 Tbsp Milk
Oil for Frying
8 oz. Mozzarella Cheese, diced
About 3 Cups Sauce
DIRECTIONS:
Pound the Chicken Tenders until flat. Crack 2 eggs in a bowl, add the eggs and stir well.
Put the bread crumbs in a big bowl.
Dredge all of the chicken in the egg mixture and then right into the bread crumbs to coat. Put them in a large dish and get ready to fry.
Heat about 3 inches of oil in a cast iron skillet or frying pan. Get it hot and fry a couple of pieces of chicken at a time.
Drain well with paper towels and add salt and pepper.
Lay down the finished chicken pieces in a baking pan or cookie sheet. Add a big Tablespoon of sauce on them. Add the diced Mozzarella cheese to the tops.
Bake on 350 degrees for about 20 minutes. There should be enough sauce leftover to serve with Pasta!!
