This was a very comforting meal. I went to Costco and picked up a cooked chicken. I used the entire 2 breasts of the chicken and it worked out perfectly. If you see the mixture is a little dry feel free to add a little more milk and butter, which is what I did.
INGREDIENTS:
2 1/2 Cups diced cooked chicken
1/2 Cup diced onions
2/3 Cup Butter
3/4 Cup Milk
1 Can Chicken Bouillon
1/3 Cup Flour
1 Large potato, diced in small chunks and boil for just 3 minutes just to lightly soften in a small pot of water.
2 Cups mixed vegetables (I boiled up some fresh carrots and also used a bag of mixed veggies to make up the 2 cups in total)
Salt & Pepper, to taste
2 Pie crusts
1 egg for top of crust
RECIPE:
Put butter in a medium sized dutch oven to melt. Add onions and stir until soft. Add flour and stir until mixture is smoothe. Add milk and salt and pepper. Add bouillon. Once hot, add in the potatoes and the veggies. Stir it all up and turn heat to low and let it cook, stirring occasionally, for about 10 minutes. Let cool and refrigerate overnight.
Next day, lay one pie crust into a springform pan or whatever pie plate you use. Add in cold chicken mixture and top with remaining crust. Put egg in a small bowl and mix well. Brush the top of the pie.
Bake on 425 for 50 minutes. Halfway thru cooking check that the outer crust is not too well done. If so, cover crust with foil and remove the last 5 minutes.
It was such a great meal. The potatoes were cooked just great.
