Krispy Kasseri & Peanut Chicken




In the middle of the week I take inventory of what is leftover in my veggie bin in the fridge. I do this because every Friday morning I like to have dinner for the whole weekend done by 11:00 AM on Friday. I had half a bag of Spinach and some Feta, 1/2 an onion, tomato & scallions left over in the fridge from the week. So yesterday I picked up these Chicken Breasts for $6.81 at Aldi's. I will eat some of the Chicken with Rice tonight for dinner and I'll use the rest in Spinach Salads for Saturday & Sunday.



INGREDIENTS:


1 1/2 Pound Chicken Breast

1/2 Cup Grated Kasseri Cheese

1/2 Cup Honey Roasted Peanuts, minced

1 Cup Bread Crumbs

1 Egg

1/4 Cup Milk

1 Cup Vegetable oil. Start with 1 cup and add as needed.

Salt & Pepper, to taste


RECIPE:


Take each Chicken Breast and wrap in Saran Wrap and then pound out with a mallet until medium thin.



In a bowl, mix together the Cheese, Peanuts and Bread Crumbs.



Add Salt & Pepper to taste. In another bowl, combine egg and milk and mix well with a fork.



Dredge each Chicken Breast in Egg mixture and thickly coat in the Bread Crumb mixture. Heat oil to medium and gently cook each Chicken piece until browned.



It is always a good idea to remove the first cooked piece and cut in half to test for doneness. Remove each piece as cooked and lay it on paper towels to absorb the excess oil.





Cool Chicken and refrigerate until ready to eat, or eat right away like I did. I had a piece for breakfast!!
