Poached Pears in Puff Pastry

A friend of mine gifted me a bag of pears. These were really good and very easy and fun to make. Wished I would have had some vanilla ice cream on hand!!

INGREDIENTS:

2 Cups Water

1/2 Cup Sugar

1/2 Lemon, juiced

2 Tbsp Honey

1 teaspoon vanilla

2 Pears

1 Egg

1/3 of a sheet of Puff pastry, cut in 6 strips lengthwise

RECIPE:

Cut a little off the bottom of the pear. Using a knife, from the bottom of the pear, gently use a paring knife and remove the core of the pear. Peel both pears.

Combine the first 5 ingredients and put in a pan. Heat to boiling and then turn it way down to simmer. Once it stops bubbling, lay down the 2 pears. Cook for about 20 minutes, turning every 5 minutes.

Remove pears from pan and let drain on a paper towel.

Gently wrap both pears with 3 strips of pastry each. Start at the bottom and work your way up. Once covered, brush egg wash on the pastry.

Put the pears in a cast iron skillet (or similar oven proof dish). Bake on 375 for about 30 minutes or until golden brown. Serve with ice cream or just by themselves. Enjoy!!
