Sausages, Potatoes, Peppers & Onions



Me & my son ate late last night but it was worth waiting for. This is such an easy one pan dish and served with a good Italian Bread. I put the potatoes in first for 20 minutes because I like them extra crispy.


This was the first time making Italian Bread for me and it was pretty good. The reason why there is an Italian Bread bag in the picture above is because I bought a loaf of bread because I was afraid if the bread didn't come out good, I had a backup loaf. So I put my bread in the bag to surprise my son.


INGREDIENTS:


2 Pounds Sausages, 1/2 sweet and 1/2 hot

3 Large Potatoes, peeled and quartered

4 peppers (I used one each of green, red, yellow & orange)

1 Large Onion, sliced

Olive Oil

Salt & Pepper


RECIPE:


Preheat oven to 375 degrees. In a large baking pan, splash some olive oil on the bottom to coat. Add in the potatoes and bake for 20 minutes.



Remove pan from oven and add in the sausages and the peppers and onions. Add Salt & Pepper to taste.





Put pan back in the oven and cook for about an hour and 15 minutes or until golden brown. Halfway thru, you want to remove pan and mix everything up. The juices from the sausages are going to make a sauce on the bottom and you want to spread the love.



Remove from oven and serve with a good crispy Italian Bread.



We finished with a delicious mini bundt cake my son made and ice cream, followed by an Affogato espresso. The word affogato means "drowned" in Italian. An espresso, with ice cream and a big splash of Grand Marnier.
