A great way to have a burger and leave the bread out. I was actually able to lift the whole thing and eat it just like a burger with a bun. It has Swiss Cheese, Pickles, Spinach, Bacon and Ketchup. And yes, the Ketchup was awesome with the sweet potato!!
INGREDIENTS:
1 Burger Patty
1 Very wide Sweet Potato, cut in 1" slabs
Pickle Slices
Swiss Cheese
8 pieces of Raw Spinach
3 Slices of Bacon, cooked
Coconut Oil
Salt & Pepper
RECIPE:
Preheat oven to 375.
In an oven-proof pan or cast iron, add some Coconut Oil and heat on a medium stovetop. Add in sweet potato slices and sprinkle tops with salt & pepper. Sauté for about 5 minutes and then flip over and cook another 5 minutes. Then put pan in oven for 15 minutes.
Meanwhile, cook your bacon and burger on stovetop. Flip over and finish in oven for about 7 minutes. Add cheese to burgers and cook another 2 minutes.
Take your sweet potato "bottom bun" and add your burger, pickles, bacon, ketchup and a couple of leaves of spinach. Add your top bun and use the rest of the potatoes as a side.
