I bought this Turkey Breast at Aldi's right before Thanksgiving and put it in the freezer. Took it out last night and defrosted it.
I baked 2 white potatoes and one sweet potato. Peeled them when cool and mashed them all together with milk and butter. I also had a box of Stove Top Stuffing Mix (first time buying this). So I made the Stuffing too. Then I just filled up my cast iron with the potatoes on one side and the stuffing on the other. I put a dry rub on the turkey and let it sit uncovered in the fridge all day. Then I turned the oven on 375 this evening and brushed a little butter on the turkey and put the casserole and turkey in the oven for about an hour.
Nothing fancy but a good dinner. And, three more dinners for the freezer.
