Wrinkle Phyllo Cake



This was such a nice finish to a great Greek dinner. I was looking for something Greek to serve and also something that wasn't a lot of work. I am so happy I made this once viral Tik-Tok Wrinkle Cake. Crispy Phyllo, plenty of butter and just so sweet and delicious. I served it with Affagato.


INGREDIENTS:


3/4 Cup Sugar

2 eggs plus 2 egg yolks

2 Cups Milk

1 Tsp Vanilla

Zest of One Lemon

1 Cup Unsalted Butter

12 Phyllo Sheets

1/2 Cup Water

1/2 Cup Honey

1 tsp Lemon Juice

1 Cinnamon Stick



RECIPE:


As always, gather your ingredients.



Melt Butter and cook until it has a nutty smell. Skim the foam off the top as it cooks.



Brush the bottom of an 8X12 Pan with butter. Half one sheet of phyllo, brush butter on it and lay on the bottom. Then do it again so that the bottom of the pan is covered by the two sheets.


Next, butter each sheet and just gather it up krinkling it and lay it the long way in the pan. Continue doing this until the sheets are gone. If you want to add a couple more feel free. I did.



Once all the sheets are in the pan, evenly pour the rest of the butter on top of the pastries. Bake on 275 for about 20 Minutes.



While that is in the oven, in a small bowl, whisk together the Eggs and the Sugar. Then add in the Zest, the Milk and the Vanilla.



Take pan out of the oven and immediately and evenly pour the mixture over the top of the crispy phyllo. Once oven is at 325, put cake back in the oven for about 15 minutes until the egg is firm and set but not too firm.



Combine Water, Honey, Cinnamon Stick and Lemon Juice and bring to a boil. Once it boils turn down to simmer and reduce liquid to a third. Remove from the heat and cool slightly.



Remove cake from the oven and pour warm syrup evenly. Let cool for about 1/2 an hour.



It was really very easy to make and just a perfect ending. I served it with Espresso with a splash of Grand Marnier and a scoop of Gelato. Perfect.
